That is one of my favorite quotes. Honey is such an amazing, and healing ingredient. The whole process in which it is made is so beautiful and the end result is beneficial, not only for internal health, but as a wonderful natural beauty ingredient as well. There is nothing better than curling up with a hot cup of tea with a little honey in it to wind down the day. These infused honey's are loaded with extra benefits with the addition of herbs or flowers.
To make infused honey:
- Fill a clean, dry jar with 1/3 to 1/2 the way full of your chosen herbs/flowers.
- Fill the rest of the jar with local honey.
- Stir or turn the jar over ever couple of days for about a week.
- Strain out any extra herbs. Roses and lavender are okay to leave in.
- The honey will keep indefinitely.
For the top photo:
I made a Calming blend which included a mix of lavender buds (which I bought here) and chamomile (here).
This is perfect in a cup of tea before bed, to help with relaxation and induce deep sleep.
For the bottom photo:
This is a rose infused honey. (Here are the roses I use) The flavor of rose is shown to raise your spirits and your energy! Its perfect on scones or biscuits, or anything that you would top with honey!
The flavor infusions are endless. Basil would make a great savory honey; spices or vanilla bean would also make great honey for tea or baked goods. This is just another great way to use up the abundant herbs growing in your garden! Happy infusing!!
